  12. 1 drop of dry red wine
  13. I use 2 eggs per person, medium or large chicken

  1. Chop the pepper, pour a little olive oil and fry under the grill ... 15 minutes, stirring, another 15 minutes.
  2. Gather the others, chop the vegetables... Mise en place!
  3. Oops, I forgot to fry the jalapenos, so I grilled them first.
  4. Add all the olive oil, onion and garlic and sauté until translucent... 10 minutes.
  5. Add all the spices, stir and let it rise!... 5 minutes.
  6. Add tomatoes, peppercorns, bay leaf, and 1/4 to 1/2 cup wine. Cover, cook over medium heat until tomatoes are soft... 15-20 minutes.
  7. Put in a preheated pan, heat until bubbles appear, beat the eggs carefully. When the egg whites begin to harden, place them in the oven (preheated) at 450F until the egg whites are thickened and the yolks are liquid. Maybe 15 minutes.
  8. Time for a bowl or plate, croutons, more olive oil and the rest of the wine.
  9. Freeze well! Pints ​​for two for midweek dinner
