- 1/2 (14 ounces) chopped tomatoes
- 1 lg jalapeno pepper [sliced]
- 1/4 teaspoon dried thyme
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon Tony Catcher's seasoning
- 1/4 teaspoon chopped bay leaf
- 1/4 cup low-sodium chicken broth
- 2 x frying oil

- 1 package (15 ounces) Bear Creek Gumbo mix [wait for full boil before adding]
- 2 cups low-sodium chicken broth
- 6 cups of water
- 2 cups precooked white rice
- Hot Louisiana sauce to taste
- Season Tony Catcherys to taste
- Granulated garlic powder to taste
- Granulated onion powder as desired

Steps to cook Jambalaya with chicken and Mike's sausage
- Cut all the vegetables and chop the vegetables finely.

- Pour some oil into a heavy bottomed frying pan and add all the spices.

- Add the vegetables to the pan and fry until slightly translucent. Mix well.
