Ingredients and spices that need to be Get to make Mysore style Masala Dosa:

  1. For Dosa batter -
  2. 3 cups Rice
  3. 3/4 cup Urad Dal
  4. Handful Poha
  5. 1 Tbsp fenugreek seeds
  6. as required Salt
  7. As needed Adequate water
  8. as required Ghee while frying
  9. For Masala Filling
  10. 2-3 medium size potatoes boiled and coarsely crushed
  11. 1 medium size Beetroot grated
  12. 1 medium size carrot grated
  13. 1 medium size onion chopped
  14. 1 medium size capsicum chopped
  15. 1 cup cabbage chopped
  16. 1 medium size tomato chopped
  17. 1/2 tsp mustard seed
  18. 1/2 tsp cumin seeds
  19. Pinch asafoetida
  20. 6-7 Few curry leaves
  21. 1 lime juice
  22. as required Few coriander leaves chopped
  23. 1 Tbsp Chana Dal
  24. 1 Tbsp Urad Dal
  25. 1 tsp Pau Bhaji Masala
  26. 1 tsp red chilli powder
  27. 1 tsp turmeric powder
  28. 1-2 green chillies crushed
  29. as per taste Salt
  30. as required Oil
  31. For Chilli Garlic Chutney
  32. 5-6 garlic cloves
  33. 1 medium size onion chopped
  34. 5-6 whole red chillies
  35. 1 tsp coriander powder
  36. 1 tsp cumin powder
  37. 1 Tbsp tamarind pulp
  38. as per taste Salt
  39. as required Oil

Steps to make to make Mysore style Masala Dosa

  1. For Chilli Garlic Chutney - soak whole red chillies in hot water for 30 mins. In a blender add garlic cloves, chopped onion, red chillies and blend smooth. In a wok heat oil, add the chilli garlic paste, add red chilli powder, coriander powder, tamarind pulp, salt and mix well. Cook for 2-3 mins until oil surfaces. Set aside
  2. For Dosa Batter - in a bowl add Rice and adequate water. Soak for 6-7 hours. Add Poha. Make a paste and set aside
  3. In a bowl soak Urad Dal and fenugreek seeds for 6-7 hours. In a blender make a paste with adequate water. Mix both the batters together and ferment covered for 10-12 hours. Add salt and mix well. Batter is ready
  4. For Masala filling - in a wok heat oil, add mustard seeds, cumin seeds, crushed chilli, onions. Fry until the onions are softened. Add grated carrot, grated beet, chopped tomatoes, chopped cabbage, chopped capsicum and mix well.
  5. Add coarsely mashed potatoes, red chilli powder, crushed green chillies, turmeric powder, Pau Bhaji Masala, lime juice. Mix well. Add 1/2 cup water. Mix. Add salt and stir. Mash the potatoes further if need be. Set aside
  6. In a dosa Tawa sprinkle some water. Once it evaporates take a ladle of the batter and add to the tawa. With the back of the ladle make a circular movement on the tawa to spread the batter. Add drops of ghee. Fry for 1-2 mins.
  7. Add the chilli garlic Chutney on it and add the Masala on one part. Fold the half. Once cooked, set aside
  8. For accompaniment add Coconut Chutney and Sambhar. Enjoy a wholesome meal
  9. Plate and enjoy!
