- In a medium saucepan over medium heat, add a little vegetable oil. Add the pork and cook until golden brown, about 3 minutes. Remove the pork and add the chicken. Fry for another 3 minutes. Return the pork to the pan with the chicken.
- Pour the cooking liquid into the pan. Add the garlic, chilli, soy sauce and bay leaves. Simmer for about 2 minutes, then add the pineapple juice and rice vinegar. Simmer, covered, for 30 minutes or until the chicken is cooked through, the pork is tender and the sauce has reduced by at least half and thickened slightly. Serve on freshly steamed rice.
