- 1 cup maida
- 2/3 cup wheat flour
- 1 tbsp carom seeds
- 1 tbsp black pepper powder
- To taste salt
- 2 tbsps oil
- 2 tbsps ghee for dough
- 2 tbsps beetroot pulp
- 2 tbsps spinach & mint leaves pulp
- 2 tbsps purple cabbage pulp water
- 2 tbsps turmeric water
- As needed ghee & 2 tbsps rice flour for saata
- as required As required oil for frying
Instructions to make to make Multi colored mathri
- Prepare all purée,take maida & wheat flour add salt,carom seeds,ghee,oil,black pepper powder,mix everything well in a bowl.Divide into five equals parts.Now add turmeric water in 1 flour part.knead tight dough,add two drop ghee,knead,cover & keep aside for 10 minutes.



- In second portion add purple purée knead tight dough add ghee knead,cover,keep aside.same process for spinach,mint & plain & beetroot dough.


- Prepare saata.mix ghee & rice flour beat for 4 minutes with hand.knead all dough with ghee for softness,roll all dough with help of rolling pin.


- Apply saata on all roll dough,on white roti keep beetroot roll (roti),then spinach,then light blue,then turmeric yellow,roll all five.



- Cut in small pieces,press slightly as shown in photo,roll thick mathri,make marks with forks,this help avoid the mathri puffing up while frying.



- Put the mathri in medium heat oil,fry mathri on low flame till they turn golden brown both sides.


- Serve in serving plate with masala ginger tea.If you like sprinkle chat masala on top of mathri.
